- 4 eggs
- 1/2 cup granulated sugar
- 1/2 cup all-purpose flour
- 1/4 cup cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- Powdered sugar (for dusting)
- 2 cups heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 can (21 oz) cherry pie filling
- Chocolate shavings (for garnish)
Instructions
- Preheat your oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper.
- In a large bowl, beat the eggs and granulated sugar together until thick and pale.
- Sift in the flour, cocoa powder, baking powder, and salt. Gently fold the mixture until well combined.
- Pour the batter into the prepared pan, spreading it out evenly. Bake for 12-15 minutes or until the cake springs back when touched.
- While the cake bakes, lay a clean kitchen towel on your counter and dust it with powdered sugar.
- Once the cake is done, carefully invert it onto the prepared towel and peel off the parchment paper. Roll the cake and towel together from the short end and let it cool completely.
- In another bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Carefully unroll the cooled cake and spread the whipped cream over the surface. Spoon the cherry pie filling on top of the whipped cream.
- Roll the cake back up without the towel and place it seam side down on a serving platter.
- Garnish the top with chocolate shavings. Refrigerate the roll for at least 1 hour before serving.
Notes
Store in the refrigerator for up to 3 days; cover or store in an airtight container. Can freeze without cherry filling and frosting.
