Description

A delightful dessert that combines the classic flavors of Black Forest cake into a fun roll with chocolate, whipped cream, and cherries.


Ingredients

  • 4 eggs
  • 1/2 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Powdered sugar (for dusting)
  • 2 cups heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 can (21 oz) cherry pie filling
  • Chocolate shavings (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 10×15-inch jelly roll pan with parchment paper.
  2. In a large bowl, beat the eggs and granulated sugar until thick and pale.
  3. Sift in the flour, cocoa powder, baking powder, and salt. Gently fold until combined.
  4. Pour the batter into the prepared pan, spreading it evenly. Bake for 12-15 minutes until the cake springs back when touched.
  5. Dust a clean kitchen towel with powdered sugar and invert the cake onto it. Carefully peel off parchment paper and roll the cake with the towel from the short end. Let it cool completely.
  6. In a bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  7. Unroll the cooled cake, spread whipped cream over the surface, and spoon cherry pie filling on top.
  8. Roll the cake back up without the towel, seam side down, and place on a serving platter.
  9. Garnish with chocolate shavings on top and refrigerate for at least 1 hour before serving.

Notes

Store leftovers in the refrigerator for up to 2-3 days. It’s best enjoyed within the first day or two.
