Description

A rich and indulgent dessert that combines the classic flavors of Black Forest cake with creamy cheesecake, topped with cherries and whipped cream.


Ingredients

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup granulated sugar (for crust)
  • 1/4 cup unsalted butter, melted
  • 2 (8 oz) blocks cream cheese, softened
  • 1 cup granulated sugar (for cheesecake)
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 2 tbsp all-purpose flour
  • 1 can pitted cherries in syrup (or 1 1/2 cups fresh cherries)
  • 1 tbsp cornstarch
  • 1/4 cup granulated sugar (for cherry layer)
  • 2 tbsp cherry liqueur or brandy (optional)
  • 1 cup heavy cream
  • 3 tbsp powdered sugar
  • 1 tsp vanilla extract (for whipped cream)
  • Shaved chocolate or chocolate curls (for garnish)

Instructions

  1. Preheat the oven to 325°F (163°C). In a bowl, mix chocolate cookie crumbs, 1/4 cup granulated sugar, and melted butter. Press into the bottom of a 9-inch springform pan and bake for 8-10 minutes. Let it cool.
  2. In a large bowl, beat cream cheese and 1 cup sugar until smooth. Mix in vanilla and flour. Add eggs one at a time, followed by sour cream. Pour over the cooled crust. Bake for 50-60 minutes until slightly jiggly. Cool to room temperature, then refrigerate for at least 4 hours.
  3. In a saucepan, combine cherries, 1/4 cup sugar, and cornstarch. Add cherry liqueur if desired. Cook until thickened, about 5-7 minutes. Let cool.
  4. Beat heavy cream, powdered sugar, and 1 tsp vanilla until stiff peaks form. Spread over the cherry layer and garnish with chocolate shavings.
  5. Chill for at least 1 hour before serving. Carefully remove from the pan, slice, and enjoy!

Notes

Serve chilled, garnished with chocolate shavings or cherries. Store covered in the refrigerator for 4-5 days or freeze for up to 3 months.
