- 2 large eggs
- 4 ripe bananas, mashed
- 1 tsp vanilla extract
- 1 cup (240ml) buttermilk
- 1 cup (120g) chopped walnuts
- 8 oz (225g) cream cheese, softened
- 1/2 cup (100g) powdered sugar
- 1 tsp vanilla extract
- 1/2 cup (120ml) heavy cream
- 1 cup (240ml) heavy cream
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
- Chopped walnuts (for garnish)
- Banana slices (for garnish)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon (if using).
- In a separate large bowl, beat the softened butter and granulated sugar together until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Stir in the mashed bananas and vanilla extract.
- Gradually add the dry ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
- Gently fold in the chopped walnuts.
- Pour the batter evenly into the prepared pans and bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
- For the cream cheese filling, beat the softened cream cheese and powdered sugar until smooth. Add the vanilla extract and heavy cream, beating until light and fluffy. Refrigerate until ready to use.
- For the whipped cream frosting, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form. Keep in the fridge until ready to frost the cake.
- Once the cakes have cooled, place one layer on a serving platter and spread the cream cheese filling on top. Top with the second cake layer and frost with whipped cream.
- Garnish with chopped walnuts and banana slices before serving.
Notes
Ensure bananas are very ripe for the sweetest flavor. Chill mixing bowl for better whipping results.
