Description

A delightful cake that combines ripe bananas with crunchy walnuts, topped with a light whipped cream.


Ingredients

  • 2 ripe bananas, mashed
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup walnuts, chopped
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and grease and flour a cake pan.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Add in the eggs, one at a time, mixing well after each addition, then stir in vanilla extract and mashed bananas.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the banana mixture, mixing until just combined.
  6. Fold in the chopped walnuts.
  7. Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick comes out clean.
  8. Let the cake cool completely.
  9. Whip the heavy cream with powdered sugar until stiff peaks form.
  10. Frost the cooled cake with whipped cream and garnish with walnuts and banana slices if desired.

Notes

Store any leftover cake in an airtight container for up to 3 days at room temperature or up to a week in the refrigerator.
