A delightful cake that combines ripe bananas with crunchy walnuts, topped with a light whipped cream.

- 2 ripe bananas, mashed
- 1/2 cup butter, softened
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup walnuts, chopped
- 1 cup heavy cream
- 2 tablespoons powdered sugar
Instructions
- Preheat the oven to 350°F (175°C) and grease and flour a cake pan.
- Cream together the softened butter and sugar until light and fluffy.
- Add in the eggs, one at a time, mixing well after each addition, then stir in vanilla extract and mashed bananas.
- In another bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the banana mixture, mixing until just combined.
- Fold in the chopped walnuts.
- Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick comes out clean.
- Let the cake cool completely.
- Whip the heavy cream with powdered sugar until stiff peaks form.
- Frost the cooled cake with whipped cream and garnish with walnuts and banana slices if desired.
Notes
Store any leftover cake in an airtight container for up to 3 days at room temperature or up to a week in the refrigerator.
