  • 1/2 cup cream cheese, softened

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then add the vanilla extract.
  5. Gradually mix in the mashed bananas.
  6. Alternately mix in the dry ingredients and buttermilk, combining until just mixed.
  7. Stir in the chopped walnuts.
  8. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  9. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  11. For the frosting, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  12. Beat in the softened cream cheese until smooth and creamy.
  13. Once the cake has cooled, spread the cream cheese frosting over the top and sprinkle with additional chopped walnuts for garnish.

Notes

Make sure your bananas are very ripe for the best flavor. Use room temperature ingredients for a smoother batter. Don’t overmix the batter; stir until just combined to keep the cake light and fluffy.
