Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup sugar
  • 1/4 cup cornstarch
  • 2 cups milk
  • 4 egg yolks
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract
  • 3 ripe bananas, sliced
  • 2 cups whipped cream
  • Extra graham crumbs for topping

Instructions

  1. Mix the graham cracker crumbs and melted butter in a bowl. Press this mixture into the bottom of a baking dish and chill it in the refrigerator.
  2. In a saucepan, combine the sugar, cornstarch, and milk. Cook over medium heat until the mixture thickens.
  3. In a separate bowl, temper the egg yolks by slowly adding a little of the hot mixture to them. Then return the egg yolk mixture to the saucepan and cook until smooth. Add the butter and vanilla extract, stirring until combined.
  4. Layer the sliced bananas over the chilled crust. Pour the custard over the bananas and allow it to chill in the refrigerator for about 120 minutes.
  5. Before serving, top the dessert with whipped cream and sprinkle with extra graham cracker crumbs.

Notes

For best flavor, use ripe bananas. You can chill the dessert overnight to enhance the flavors. Drizzle chocolate sauce or sprinkle cocoa powder for added appeal.
