A warm and filling stew combining tender ground beef and fresh veggies with fluffy rice, perfect for a family dinner.
Ingredients

- 1 lb ground beef (or lean ground turkey)
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 2 large carrots, sliced
- 1.5 cups frozen or canned green peas
- 2 tbsp tomato paste
- 1/2 tsp cumin (optional)
- Salt & pepper to taste
- 1.5 cups cooked basmati or jasmine rice
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet. Add chopped onion and garlic, cooking until soft and fragrant—about 3 minutes.
- Add ground beef to the skillet. Break it up and brown it fully, seasoning with salt, pepper, and optional cumin.
- Stir in carrots, peas, and tomato paste. Add a splash of water or broth, cover, and let simmer on low heat for 15–20 minutes until veggies are soft and flavors meld together.
- While the stew simmers, cook your rice or reheat leftovers. Fluff and set aside.
- Spoon the hearty beef and veggie stew next to (or over) your rice. Garnish with parsley and serve warm!
Notes
For added flavor, include other veggies like bell peppers or potatoes. Adjust seasonings to taste.
