Ingredients

  • 1 lb ground beef
  • 2 small zucchinis, sliced
  • 1 cup mushrooms, sliced
  • 1/2 cup shredded carrots
  • 1 small onion, diced
  • 3 tbsp soy sauce
  • 1 tbsp hoisin sauce (optional for sweetness)
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • Salt & pepper, to taste
  • Chopped parsley or green onions (for garnish)

Instructions

  1. In a skillet, cook ground beef over medium heat until browned. Drain excess fat if needed.
  2. Push the beef to one side of the skillet and add sesame oil, diced onion, and minced garlic. Sauté for about 2 minutes until fragrant.
  3. Stir in sliced mushrooms, shredded carrots, and zucchini. Cook for 5–7 minutes until the vegetables are tender.
  4. Add soy sauce and hoisin sauce (if using) to the skillet. Stir everything together to coat evenly.
  5. Let it simmer for 2–3 minutes. Garnish with parsley or green onions and serve hot.

Notes

Serve over rice or cauliflower rice for a complete meal. Customizable with various veggies.
