Ingredients

- 1 lb ground beef
- 2 small zucchinis, sliced
- 1 cup mushrooms, sliced
- 1/2 cup shredded carrots
- 1 small onion, diced
- 3 tbsp soy sauce
- 1 tbsp hoisin sauce (optional for sweetness)
- 1 tbsp sesame oil
- 2 cloves garlic, minced
- Salt & pepper, to taste
- Chopped parsley or green onions (for garnish)
Instructions
- In a skillet, cook ground beef over medium heat until browned. Drain excess fat if needed.
- Push the beef to one side of the skillet and add sesame oil, diced onion, and minced garlic. Sauté for about 2 minutes until fragrant.
- Stir in sliced mushrooms, shredded carrots, and zucchini. Cook for 5–7 minutes until the vegetables are tender.
- Add soy sauce and hoisin sauce (if using) to the skillet. Stir everything together to coat evenly.
- Let it simmer for 2–3 minutes. Garnish with parsley or green onions and serve hot.
Notes
Serve over rice or cauliflower rice for a complete meal. Customizable with various veggies.
