- 1 lb chicken breast or thighs, cooked and shredded
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 3 carrots, sliced
- 3 medium potatoes, cubed
- 4 cups chicken broth
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until translucent.
- Add sliced carrots and cubed potatoes, cooking for about 5 minutes.
- Stir in the cooked chicken, chicken broth, thyme, and rosemary. Bring to a boil.
- Reduce heat and let simmer for about 30 minutes or until vegetables are tender.
- Season with salt and pepper to taste, and serve warm.
Notes
For extra flavor, add a splash of lemon juice or a teaspoon of hot sauce. This stew can be stored in the refrigerator for 3 to 4 days or frozen for up to 3 months.
