Ingredients

  • 1 lb chicken breast or thighs, cooked and shredded
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 3 medium potatoes, cubed
  • 4 cups chicken broth
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until translucent.
  2. Add sliced carrots and cubed potatoes, cooking for about 5 minutes.
  3. Stir in the cooked chicken, chicken broth, thyme, and rosemary. Bring to a boil.
  4. Reduce heat and let simmer for about 30 minutes or until vegetables are tender.
  5. Season with salt and pepper to taste, and serve warm.

Notes

For extra flavor, add a splash of lemon juice or a teaspoon of hot sauce. This stew can be stored in the refrigerator for 3 to 4 days or frozen for up to 3 months.
