- 1 lb chicken breast or thighs, cooked and shredded
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 3 carrots, sliced
- 3 medium potatoes, cubed
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, sautéing until the onion is translucent.
- Stir in the sliced carrots and cubed potatoes, cooking for about 5 minutes.
- Add the shredded chicken to the pot.
- Pour in enough water or chicken broth to cover the ingredients, and bring to a boil.
- Reduce the heat and let it simmer until the vegetables are tender, about 20-30 minutes.
- Season with salt and pepper to taste, and serve warm.
Notes
Use leftover chicken for quicker preparation. Add extra spices for more flavor.
