Description

Ingredients

  • 1 lb chicken breast or thighs, cooked and shredded
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 3 medium potatoes, cubed

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  3. Stir in the sliced carrots and cubed potatoes, cooking for about 5 minutes.
  4. Add the shredded chicken to the pot.
  5. Pour in enough water or chicken broth to cover the ingredients, and bring to a boil.
  6. Reduce the heat and let it simmer until the vegetables are tender, about 20-30 minutes.
  7. Season with salt and pepper to taste, and serve warm.

Notes

Use leftover chicken for quicker preparation. Add extra spices for more flavor.
