Description

A warm and filling stew perfect for outdoor adventures or cozy nights at home, made with ground beef and fresh vegetables.


Ingredients

  • 1 lb ground beef
  • 2 tbsp olive oil
  • 1/2 onion, diced
  • 3 cloves garlic, minced
  • 3 cups beef broth
  • 1 can diced tomatoes
  • 1 cup baby potatoes, halved
  • 2 carrots, sliced
  • 1/2 cup green peas
  • 1/2 cup corn kernels (plus 1 corn cob, optional)
  • 1/2 cup green beans
  • 1 tsp smoked paprika
  • Salt & pepper, to taste
  • Fresh parsley for garnish

Instructions

  1. Brown the ground beef with the diced onions and minced garlic in olive oil over the campfire or on the stove.
  2. Once the beef is cooked, add the baby potatoes, sliced carrots, diced tomatoes, beef broth, and seasonings. Let it simmer for about 25 minutes.
  3. After 25 minutes, add the green peas, corn kernels, green beans, and the optional corn cob. Cook for an additional 10 minutes.
  4. Adjust the seasoning if needed. Garnish with fresh parsley and serve hot.

Notes

You can use any vegetables you have on hand. For a thicker stew, let it simmer longer without the lid.
