A warm and filling stew perfect for outdoor adventures or cozy nights at home, made with ground beef and fresh vegetables.
Ingredients

- 1 lb ground beef
- 2 tbsp olive oil
- 1/2 onion, diced
- 3 cloves garlic, minced
- 3 cups beef broth
- 1 can diced tomatoes
- 1 cup baby potatoes, halved
- 2 carrots, sliced
- 1/2 cup green peas
- 1/2 cup corn kernels (plus 1 corn cob, optional)
- 1/2 cup green beans
- 1 tsp smoked paprika
- Salt & pepper, to taste
- Fresh parsley for garnish
Instructions
- Brown the ground beef with the diced onions and minced garlic in olive oil over the campfire or on the stove.
- Once the beef is cooked, add the baby potatoes, sliced carrots, diced tomatoes, beef broth, and seasonings. Let it simmer for about 25 minutes.
- After 25 minutes, add the green peas, corn kernels, green beans, and the optional corn cob. Cook for an additional 10 minutes.
- Adjust the seasoning if needed. Garnish with fresh parsley and serve hot.
Notes
You can use any vegetables you have on hand. For a thicker stew, let it simmer longer without the lid.
