  • 1/3 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1 egg white
  • 1/2 teaspoon vanilla extract
  • 7 oz dark chocolate, chopped
  • 7 oz milk chocolate, chopped
  • 2 1/2 cups heavy cream, chilled
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • 1/2 cup dark chocolate, finely chopped
  • 1 tablespoon corn syrup or honey
  • 1 teaspoon unsalted butter
  • Chopped hazelnuts for garnish
  • Edible gold leaf or gold dust (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line the bottom of a heart-shaped springform pan with parchment paper.
  2. Mix ground hazelnuts, flour, sugar, melted butter, egg white, and vanilla extract until combined, then press evenly into the prepared pan.
  3. Bake for 12–15 minutes or until lightly golden. Let it cool completely in the pan.
  4. Melt the dark chocolate and milk chocolate separately, then allow them to cool slightly.
  5. In a large bowl, whip the heavy cream with sugar and vanilla extract until soft peaks form; divide into two bowls.
  6. Fold the dark chocolate into one bowl and the milk chocolate into the other.
  7. Pour the dark chocolate mousse over the cooled biscuit base and smooth with a spatula.
  8. Chill in the freezer for 15 minutes before serving.
