Ingredients

  • 200g Cake Flour (or All-Purpose Flour)
  • 200g Granulated Sugar
  • 8g Baking Powder
  • 3g Salt
  • 4 large Eggs
  • 120ml Whole Milk
  • 60ml Vegetable Oil
  • 5ml Vanilla Extract
  • 2g Cream of Tartar
  • 250g Unsalted Butter (softened)
  • 450500g Powdered Sugar
  • 6090ml Milk or Cream
  • Pink Food Coloring (Gel recommended)
  • Fresh Fruits (Strawberries, blueberries, kiwi, raspberries)
  • Apricot Jam or Neutral Glaze (optional)

Instructions

  1. Prepare a heart-shaped cake pan by greasing and flouring it or lining it with parchment paper.
  2. Sift together flour, sugar, baking powder, and salt in a bowl.
  3. Separate egg yolks and whites into different bowls.
  4. Whisk together the egg yolks, milk, oil, and vanilla extract.
  5. Beat the egg whites with cream of tartar until stiff peaks form in a separate bowl.
  6. Gradually add the dry ingredients to the egg yolk mixture, mixing until just combined.
  7. Gently fold the beaten egg whites into the batter.
  8. Pour the batter into the prepared cake pan.
  9. Bake at 170°C (340°F) for 25-35 minutes, or until a toothpick comes out clean.
  10. Cool the cake completely before frosting.
  11. Beat the softened butter until smooth and creamy.
  12. Gradually add powdered sugar, mixing on low speed, then increase to medium.
  13. Add milk or cream and vanilla extract, and beat until light and fluffy.
  14. Add pink food coloring until achieving desired shade.
  15. Level the top of the cake with a serrated knife if necessary.
  16. Apply a thin layer of frosting (crumb coat) and chill for 15-20 minutes.
  17. Apply a final layer of frosting and create a basket weave pattern with a star tip.
  18. Arrange fresh fruits in the center and brush with apricot jam or neutral glaze if desired.

Notes

Use fresh fruit in season for the best flavor. Ensure butter is at room temperature for easy mixing. Do not skip the crumb coat for a clean look.
