Ingredients

  • 1 cup zucchini, shredded & squeezed of excess water
  • 1 cup rolled oats
  • 3/4 cup whole wheat flour
  • 1/2 tsp baking soda

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the shredded zucchini, rolled oats, whole wheat flour, and baking soda.
  3. Mix until all ingredients are well combined.
  4. Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper.
  5. Bake for 15-20 minutes or until the cookies are golden and firm.
  6. Allow to cool before serving.

Notes

Squeeze out excess water from zucchini to avoid soggy cookies. Optional: add chocolate chips, nuts, or dried fruits for extra flavor.
