Ingredients

- 1 cup zucchini, shredded & squeezed of excess water
- 1 cup rolled oats
- 3/4 cup whole wheat flour
- 1/2 tsp baking soda
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the shredded zucchini, rolled oats, whole wheat flour, and baking soda.
- Mix until all ingredients are well combined.
- Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper.
- Bake for 15-20 minutes or until the cookies are golden and firm.
- Allow to cool before serving.
Notes
Squeeze out excess water from zucchini to avoid soggy cookies. Optional: add chocolate chips, nuts, or dried fruits for extra flavor.
