Ingredients

- 2 medium sweet potatoes, peeled and cubed
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp ground cumin
- Salt & pepper to taste
- 1 can black beans, drained and rinsed
- 1 cup corn (fresh, frozen, or canned)
- 1 cup green beans, trimmed
- 1 avocado, sliced (optional)
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, toss the cubed sweet potatoes with olive oil, smoked paprika, cumin, salt, and pepper. Spread them on a baking sheet and roast for about 25-30 minutes or until tender.
- In a small pot, steam the green beans until tender, about 5-7 minutes.
- In a large bowl, combine the roasted sweet potatoes, black beans, corn, and green beans.
- Optionally, top with sliced avocado and garnish with fresh cilantro.
- Serve warm.
Notes
Cut sweet potatoes evenly for even cooking. You can add other veggies like bell peppers or zucchini. For spice, consider adding diced jalapeños or cayenne pepper.
