Description

A colorful and nutritious burrito bowl featuring sweet potatoes, black beans, and corn, perfect for a healthy lunch or dinner.


Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • Salt & pepper to taste
  • 1 can black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup green beans, trimmed
  • 1 avocado, sliced (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss the cubed sweet potatoes with olive oil, smoked paprika, cumin, salt, and pepper. Spread them on a baking sheet and roast for about 25-30 minutes or until tender.
  3. In a small pot, steam the green beans until tender, about 5-7 minutes.
  4. In a large bowl, combine the roasted sweet potatoes, black beans, corn, and green beans.
  5. Optionally, top with sliced avocado and garnish with fresh cilantro.
  6. Serve warm.

Notes

Cut sweet potatoes evenly for even cooking. You can add other veggies like bell peppers or zucchini. For spice, consider adding diced jalapeños or cayenne pepper.
