A quick and nutritious dish with fresh vegetables that brightens up any meal.
Ingredients

- 1 1/2 pounds baby spinach, fresh or regular spinach, trimmed
- 1/4 cup olive oil or another vegetable oil
- 1 1/4 cups carrots, sliced
- 1/2 cup onion, chopped
- 4–6 garlic cloves, sliced or minced
Instructions
- Heat the oil in a large skillet over medium heat.
- Add the onions and garlic, sauté until they are softened.
- Stir in the carrots and cook for about 5 minutes, until they are slightly tender.
- Add the spinach and cook until wilted, about 3-4 minutes.
- Season with salt and pepper to taste, and serve warm.
Notes
For added flavor, sprinkle some red pepper flakes or your favorite herbs while cooking.
