Description

A quick and nutritious dish with fresh vegetables that brightens up any meal.


Ingredients

  • 1 1/2 pounds baby spinach, fresh or regular spinach, trimmed
  • 1/4 cup olive oil or another vegetable oil
  • 1 1/4 cups carrots, sliced
  • 1/2 cup onion, chopped
  • 46 garlic cloves, sliced or minced

Instructions

  1. Heat the oil in a large skillet over medium heat.
  2. Add the onions and garlic, sauté until they are softened.
  3. Stir in the carrots and cook for about 5 minutes, until they are slightly tender.
  4. Add the spinach and cook until wilted, about 3-4 minutes.
  5. Season with salt and pepper to taste, and serve warm.

Notes

For added flavor, sprinkle some red pepper flakes or your favorite herbs while cooking.
