- 1 cup dry orzo pasta
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup Kalamata olives, sliced
- Olive oil
- Salt and pepper to taste
Instructions
- Cook the orzo pasta according to package instructions. Drain and let it cool.
- In a large bowl, combine the cooked orzo, cherry tomatoes, cucumber, red onion, and Kalamata olives.
- Toss the ingredients gently to mix well.
- Drizzle with olive oil and season with salt and pepper to taste.
- Serve chilled or at room temperature.
Notes
