Ingredients

- 1 lb (450 g) potato gnocchi
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 10 oz (280 g) mushrooms, sliced
- 5 oz (140 g) fresh spinach
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and sliced mushrooms, cooking until the mushrooms are soft and browned, about 5-7 minutes.
- Add the gnocchi to the skillet and cook according to package directions until they are tender.
- Toss in the spinach and cook until wilted, about 2 minutes.
- Season with salt and pepper to taste.
- Serve hot, topped with Parmesan cheese if desired.
Notes
Make sure to use fresh spinach for the best flavor. Consider adding other vegetables for extra nutrition.
