Ingredients

- 1 large head of cauliflower, cut into florets
- 1/2 cup all-purpose, whole wheat or gluten-free flour
- 2 large eggs
- 3 cloves of garlic, minced
- 3 tbsp minced scallions
Instructions
- Steam the cauliflower florets until tender, then let cool slightly and mash them in a bowl.
- In a separate bowl, combine the flour, eggs, minced garlic, and scallions.
- Mix the mashed cauliflower into the egg mixture until well combined.
- Heat oil in a skillet over medium heat.
- Drop spoonfuls of the mixture into the skillet and cook until golden brown, about 3-4 minutes on each side.
- Drain on paper towels and serve hot.
Notes
These fritters can be served with yogurt or salsa and pair well with salads or main dishes. Store leftovers in an airtight container for 3-4 days, or freeze for later.
