Description

Delicious halloumi avocado toasts, perfect for breakfast or a snack, combining creamy avocado and salty halloumi cheese.


Ingredients

  • 2 slices sourdough bread, toasted
  • 1 ripe avocado, mashed
  • 4 slices halloumi cheese
  • 1 tbsp olive oil
  • 1/4 red onion, thinly sliced
  • 56 cherry tomatoes, halved
  • 1 tbsp fresh parsley, chopped
  • Salt & black pepper, to taste
  • 1/2 tsp lemon juice (for avocado)
  • Optional: balsamic glaze drizzle

Instructions

  1. Toast the sourdough until golden and crunchy.
  2. Mash the avocado with lemon juice, salt, and pepper, then spread it on the toasted bread.
  3. Heat olive oil in a pan and sear the halloumi slices until golden on both sides.
  4. Stack the seared halloumi on the avocado toast, and add the red onions and cherry tomatoes.
  5. Sprinkle with parsley and add a balsamic glaze drizzle if desired.

Notes

Best enjoyed fresh. Store components separately if there are leftovers.
