Delicious halloumi avocado toasts, perfect for breakfast or a snack, combining creamy avocado and salty halloumi cheese.
Ingredients

- 2 slices sourdough bread, toasted
- 1 ripe avocado, mashed
- 4 slices halloumi cheese
- 1 tbsp olive oil
- 1/4 red onion, thinly sliced
- 5–6 cherry tomatoes, halved
- 1 tbsp fresh parsley, chopped
- Salt & black pepper, to taste
- 1/2 tsp lemon juice (for avocado)
- Optional: balsamic glaze drizzle
Instructions
- Toast the sourdough until golden and crunchy.
- Mash the avocado with lemon juice, salt, and pepper, then spread it on the toasted bread.
- Heat olive oil in a pan and sear the halloumi slices until golden on both sides.
- Stack the seared halloumi on the avocado toast, and add the red onions and cherry tomatoes.
- Sprinkle with parsley and add a balsamic glaze drizzle if desired.
Notes
Best enjoyed fresh. Store components separately if there are leftovers.
