- 1/2 cup (113g) unsalted butter, softened
- 8 oz (225g) cream cheese, softened
- 1 cup (200g) granulated sugar
- 1/2 cup (100g) light brown sugar, packed
- 2 large eggs
- 1 1/2 tsp vanilla extract
- 2 1/2 cups (315g) all-purpose flour
- 2 tsp baking powder
- 1 tsp cornstarch
- 1/2 tsp salt
- 1/2 cup (120ml) buttermilk
- 1/2 cup guava marmalade (plus more for drizzling)
- 1 1/3 cup (175g) all-purpose flour (for streusel)
- 1 cup (200g) granulated sugar (for streusel)
- 3 tbsp brown sugar (for streusel)
- 1 tbsp vanilla extract (for streusel)
- 1/4 tsp salt (for streusel)
- 10 tbsp (140g) unsalted butter, melted (for streusel)
- 4 oz (113g) cream cheese (for glaze)
- 1/2 cup (60g) confectioners’ sugar, sifted (for glaze)
- 4 tbsp whole milk (for glaze)
- 1 tsp vanilla extract (for glaze)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 13×9-inch baking pan.
- In a stand mixer, cream the butter and cream cheese until smooth.
- Add granulated sugar and brown sugar, beating until light and fluffy, then mix in eggs one at a time, followed by vanilla extract.
- In a separate bowl, whisk together flour, baking powder, cornstarch, and salt.
- Alternate adding dry ingredients and buttermilk to the wet mixture, mixing until just combined.
- Spread half of the batter into the prepared pan, layer with guava marmalade, dollop remaining batter on top and spread gently.
- For streusel, melt butter in a bowl and mix in flour, granulated sugar, brown sugar, vanilla, and salt until crumbly.
- Sprinkle streusel over the cake batter.
- Bake for 40-50 minutes, or until a toothpick inserted comes out clean.
- For glaze, beat cream cheese until smooth, then mix in confectioners’ sugar, milk, and vanilla.
- Allow the cake to cool before drizzling with glaze and additional guava marmalade. Slice and serve!
Notes
Serve warm or at room temperature, sliced into squares. Store leftovers in an airtight container at room temperature for up to 2 days, or refrigerate for up to a week. Can also be frozen for up to 3 months.
