A delightful one-pan meal combining ground beef, zucchini, and sweet potatoes, packed with flavor and nutrition.

- 1 lb ground beef
- 1 tbsp olive oil
- 1 medium sweet potato, peeled and diced small
- 1 medium zucchini, diced
- 1/2 yellow onion, finely chopped
- 2 cloves garlic, minced
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp dried thyme
- Salt & pepper to taste
- 1/2 cup shredded cheddar or mozzarella cheese (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet over medium heat, add olive oil and diced sweet potatoes. Sauté for 8–10 minutes until softened and browned slightly, covering for quicker cooking and stirring occasionally.
- Move sweet potatoes to one side of the skillet. Add ground beef and chopped onion. Cook until browned and cooked through, about 5–7 minutes. Drain excess fat.
- Stir in minced garlic, smoked paprika, garlic powder, onion powder, thyme, salt, and pepper. Cook for 1–2 minutes until fragrant.
- Toss in diced zucchini and stir to combine. Cook for 5–7 more minutes until zucchini is tender and sweet potatoes are fully soft.
- Sprinkle shredded cheese on top and cover until melted, about 1–2 minutes.
- Remove from heat, garnish with parsley, and serve hot right out of the skillet.
Notes
Store leftovers in an airtight container in the fridge for up to 3-4 days. Reheat in the microwave or on the stovetop.
