Description

A delightful one-pan meal combining ground beef, zucchini, and sweet potatoes, packed with flavor and nutrition.


Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 medium sweet potato, peeled and diced small
  • 1 medium zucchini, diced
  • 1/2 yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp dried thyme
  • Salt & pepper to taste
  • 1/2 cup shredded cheddar or mozzarella cheese (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet over medium heat, add olive oil and diced sweet potatoes. Sauté for 8–10 minutes until softened and browned slightly, covering for quicker cooking and stirring occasionally.
  2. Move sweet potatoes to one side of the skillet. Add ground beef and chopped onion. Cook until browned and cooked through, about 5–7 minutes. Drain excess fat.
  3. Stir in minced garlic, smoked paprika, garlic powder, onion powder, thyme, salt, and pepper. Cook for 1–2 minutes until fragrant.
  4. Toss in diced zucchini and stir to combine. Cook for 5–7 more minutes until zucchini is tender and sweet potatoes are fully soft.
  5. Sprinkle shredded cheese on top and cover until melted, about 1–2 minutes.
  6. Remove from heat, garnish with parsley, and serve hot right out of the skillet.

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days. Reheat in the microwave or on the stovetop.
