Ingredients

  • 1/2 cup cooked lean ground beef
  • 1/2 cup sweet potatoes, roasted and cubed
  • 1/2 cup sautéed spinach & mushrooms
  • 1/4 cup cottage cheese
  • 1 tsp olive oil
  • Salt to taste
  • Pepper to taste
  • Garlic powder to taste
  • Optional: paprika or chili flakes for kick

Instructions

  1. Roast the Sweet Potatoes: Cube and roast sweet potatoes with olive oil, salt, and pepper at 425°F for 25 minutes.
  2. Sauté the Veggies: Cook mushrooms and spinach in olive oil with a pinch of garlic powder.
  3. Brown the Ground Beef: Season with salt and pepper, and cook until nicely browned.
  4. Add the Cottage Cheese: Scoop in cottage cheese for creaminess and protein.
  5. Assemble the Bowl: Layer roasted sweet potatoes, beef and veggie mix, and cottage cheese.
