Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) kidney beans, drained and rinsed
  • 1 can (14 oz) diced tomatoes
  • 2 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 cup beef broth
  • Optional toppings: shredded cheese, sour cream, green onions

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. Add chopped onion and minced garlic; sauté for 3-4 minutes until softened.
  3. Stir in the kidney beans, diced tomatoes, chili powder, cumin, salt, and pepper.
  4. Pour in beef broth and bring to a simmer.
  5. Reduce heat and let simmer for 20-30 minutes, stirring occasionally.
  6. Serve hot, topped with cheese, sour cream, and green onions if desired.
