A refreshing salad featuring grilled zucchini, protein-packed chickpeas, creamy burrata, and a kick of chili sauce.
Ingredients

- 2 medium zucchini, sliced lengthwise into 1/4” strips
- 1 (15 oz) can chickpeas, drained, rinsed, and patted dry
- 2 Tbsp olive oil, divided
- 1 tsp smoked paprika
- Salt & freshly ground pepper, to taste
- Burrata cheese, for serving
- Chili sauce, for drizzling
Instructions
- Preheat the grill to medium-high heat.
- In a mixing bowl, combine zucchini slices with 1 tablespoon of olive oil, smoked paprika, salt, and pepper. Toss until well coated.
- Grill zucchini for about 3-4 minutes on each side until tender and grill marks appear.
- In a separate bowl, mix chickpeas with the remaining tablespoon of olive oil, salt, and pepper.
- Once zucchini is grilled, combine in a large bowl with the chickpeas.
- Serve the salad topped with burrata cheese and a drizzle of chili sauce.
Notes
Best served warm or at room temperature; add burrata and chili sauce just before serving to maintain freshness.
