Description

A refreshing salad featuring grilled zucchini, protein-packed chickpeas, creamy burrata, and a kick of chili sauce.


Ingredients

Scale
  • 2 medium zucchini, sliced lengthwise into 1/4” strips
  • 1 (15 oz) can chickpeas, drained, rinsed, and patted dry
  • 2 Tbsp olive oil, divided
  • 1 tsp smoked paprika
  • Salt & freshly ground pepper, to taste
  • Burrata cheese, for serving
  • Chili sauce, for drizzling

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a mixing bowl, combine zucchini slices with 1 tablespoon of olive oil, smoked paprika, salt, and pepper. Toss until well coated.
  3. Grill zucchini for about 3-4 minutes on each side until tender and grill marks appear.
  4. In a separate bowl, mix chickpeas with the remaining tablespoon of olive oil, salt, and pepper.
  5. Once zucchini is grilled, combine in a large bowl with the chickpeas.
  6. Serve the salad topped with burrata cheese and a drizzle of chili sauce.

Notes

Best served warm or at room temperature; add burrata and chili sauce just before serving to maintain freshness.
