Ingredients

  • 1 cup grilled flank or skirt steak, sliced
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 tsp olive oil (for searing or grilling)
  • 1 medium sweet potato, sliced into rounds
  • 1 tsp olive oil
  • 1/2 tsp dried rosemary or thyme
  • Salt to taste
  • 1/4 cup diced mango
  • 1/4 cup diced tomato
  • 1 tbsp red onion, finely chopped
  • 1 tsp lime juice
  • Pinch of black pepper
  • 1/2 cup shredded red cabbage
  • 1 tbsp chopped onion
  • 1 tsp vinegar or lemon juice

Instructions

  1. Roast the Sweet Potatoes: Toss the sweet potato rounds with olive oil, rosemary, and salt. Roast them in the oven at 400°F (200°C) for about 20 minutes or until crispy-golden.
  2. Sear or Grill the Steak: Season the steak with garlic powder, salt, and pepper. Grill or sear the steak until it is cooked to your liking.
  3. Make the Mango Salsa: In a bowl, combine the diced mango, tomato, red onion, and lime juice. Stir well.
  4. Toss the Purple Slaw: Mix the shredded cabbage with chopped onions, vinegar, and a pinch of salt in a separate bowl.
  5. Plate it Up: Arrange the grilled steak on a plate, add the roasted sweet potato slices, and top everything with the mango salsa and slaw.

Notes

You can use any type of steak you prefer, such as ribeye or sirloin. For a sweeter flavor, add honey to the mango salsa. Make sure not to overcrowd the baking sheet when roasting sweet potatoes.
