A delightful dish that combines the rich flavors of grilled salmon with a warm, savory relish of crispy bacon, sweet corn, and fresh vegetables.
Ingredients

- 4 salmon fillets (6 oz each)
- Salt & black pepper, to taste
- 1 tbsp olive oil
- 4 slices bacon, chopped
- 1 cup sweet corn kernels (fresh or frozen)
- 1/2 cup red bell pepper, diced
- 1/4 cup green onions, sliced
- 1 tbsp apple cider vinegar
- 4 cups fresh spinach leaves
Instructions
- Season the salmon fillets with salt and black pepper.
- Heat your grill to medium-high and grill the salmon for 4–5 minutes on each side or until cooked through.
- In a skillet, cook the chopped bacon until crispy. Remove the bacon from the pan and set it aside.
- In the same pan, sauté the corn and diced red bell pepper in the bacon drippings for 3–4 minutes.
- Stir in the green onions, apple cider vinegar, and the cooked bacon.
- Place a handful of fresh spinach on each plate, top with the grilled salmon fillet, and spoon the warm bacon corn relish over each piece of salmon.
Notes
Store leftovers in separate airtight containers in the refrigerator. The salmon lasts for 3–4 days, while the relish should be consumed within 2–3 days.
