Description

Ingredients

  • 2 salmon fillets (about 6 oz / 170g each)
  • 1 tbsp olive oil
  • Juice of 1/2 lemon
  • 1 garlic clove, minced
  • 1/2 tsp dried oregano or thyme
  • Salt & pepper to taste
  • Asparagus
  • Potatoes

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix olive oil, lemon juice, minced garlic, dried oregano or thyme, salt, and pepper.
  3. Brush the mixture over the salmon fillets.
  4. For asparagus, toss with olive oil, salt, and pepper.
  5. Place salmon and asparagus on the grill.
  6. Grill the salmon for about 6-8 minutes on each side or until cooked through.
  7. For the potatoes, either parboil and fry until crispy, or wrap in foil and grill until tender.
  8. Serve the grilled salmon with fried asparagus and potatoes.

Notes

Use fresh salmon for the best flavor and avoid overcooking. Leftovers can be stored in an airtight container in the refrigerator for 2-3 days.
