Grilled Salmon with Avocado & Herb Vinaigrette

Description

A delightful dish that combines grilled salmon with fresh avocado and a zesty herb dressing, perfect for a light lunch or dinner.


Ingredients

Scale
  • 2 salmon fillets
  • 1 avocado, sliced
  • 1 cup cherry tomatoes (red and yellow), halved
  • 4 tbsp olive oil
  • Salt & pepper, to taste
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh cilantro or basil, chopped
  • 1 clove garlic, minced
  • 1 tbsp lemon juice

Instructions

  1. Rub salmon fillets with 2 tbsp olive oil, salt, and pepper.
  2. Cook on medium-high heat for 4–5 minutes per side until charred and cooked through.
  3. Whisk together the remaining olive oil, garlic, lemon juice, parsley, cilantro/basil, salt, and pepper to make the herb dressing.
  4. Plate salmon and top with avocado slices and halved cherry tomatoes.
  5. Spoon herb dressing over everything and serve warm.

Notes

Best served warm. Store leftovers in an airtight container and consume within 2-3 days.
