Ingredients

  • 23 ripe peaches, halved and pitted
  • Olive oil, for brushing
  • 5 oz arugula or baby greens
  • 1 ball fresh burrata cheese (about 4 oz)
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh basil leaves

Instructions

  1. Preheat the grill to medium heat. Brush the peach halves with olive oil.
  2. Place the peaches on the grill and cook for 2–3 minutes per side, until grill marks appear and they are slightly softened.
  3. In a large bowl, combine the arugula or baby greens, grilled peaches, burrata cheese, red onion, and fresh basil.
  4. Drizzle with your choice of savory pistachio dressing.
  5. Toss gently to combine and serve immediately.
