- 2–3 ripe peaches, halved and pitted
- Olive oil, for brushing
- 5 oz arugula or baby greens
- 1 ball fresh burrata cheese (about 4 oz)
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh basil leaves
Instructions
- Preheat the grill to medium heat. Brush the peach halves with olive oil.
- Place the peaches on the grill and cook for 2–3 minutes per side, until grill marks appear and they are slightly softened.
- In a large bowl, combine the arugula or baby greens, grilled peaches, burrata cheese, red onion, and fresh basil.
- Drizzle with your choice of savory pistachio dressing.
- Toss gently to combine and serve immediately.
