Description

A delicious and refreshing summer salad combining couscous, creamy ricotta, and sweet grilled peaches.


Ingredients

  • 1 cup couscous
  • 2 cups water or vegetable broth
  • 1 tbsp olive oil
  • 3 ripe peaches, halved and pitted
  • 1 cup ricotta cheese
  • Fresh basil or mint leaves (for garnish)
  • Salt and pepper to taste

Instructions

  1. In a saucepan, bring water or vegetable broth to a boil.
  2. Stir in couscous and olive oil, cover, and remove from heat. Let it sit for about 5 minutes.
  3. Meanwhile, preheat the grill to medium heat.
  4. Grill the peach halves, cut side down, for about 2-3 minutes until charred and softened.
  5. Fluff the couscous with a fork and transfer it to a bowl.
  6. Chop the grilled peaches and add them to the couscous along with the ricotta cheese.
  7. Season with salt, pepper, and toss gently to combine.
  8. Serve garnished with fresh basil or mint leaves.

Notes

Use ripe peaches for the best flavor. Consider adding toasted nuts or seeds for crunch.
