A delicious and refreshing summer salad combining couscous, creamy ricotta, and sweet grilled peaches.
Ingredients

- 1 cup couscous
- 2 cups water or vegetable broth
- 1 tbsp olive oil
- 3 ripe peaches, halved and pitted
- 1 cup ricotta cheese
- Fresh basil or mint leaves (for garnish)
- Salt and pepper to taste
Instructions
- In a saucepan, bring water or vegetable broth to a boil.
- Stir in couscous and olive oil, cover, and remove from heat. Let it sit for about 5 minutes.
- Meanwhile, preheat the grill to medium heat.
- Grill the peach halves, cut side down, for about 2-3 minutes until charred and softened.
- Fluff the couscous with a fork and transfer it to a bowl.
- Chop the grilled peaches and add them to the couscous along with the ricotta cheese.
- Season with salt, pepper, and toss gently to combine.
- Serve garnished with fresh basil or mint leaves.
Notes
Use ripe peaches for the best flavor. Consider adding toasted nuts or seeds for crunch.
