Ingredients

  • 2 large boneless, skinless chicken breasts
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Mixed greens (lettuce, spinach, etc.)
  • Cherry tomatoes, halved
  • Cucumber, sliced
  • Feta cheese, crumbled
  • Tzatziki sauce (homemade)

Instructions

  1. In a bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Marinate the chicken breasts for at least 30 minutes.
  2. Preheat the grill to medium-high heat.
  3. Grill the chicken for 6-7 minutes on each side until cooked through.
  4. Let the chicken rest for a few minutes before slicing.
  5. In a large bowl, combine mixed greens, cherry tomatoes, sliced cucumber, and feta cheese.
  6. Add the sliced grilled chicken on top.
  7. For the tzatziki sauce, mix yogurt, grated cucumber, minced garlic, lemon juice, and salt in a bowl.
  8. Drizzle tzatziki sauce over the salad and serve.

Notes

Allow the chicken to marinate longer for more flavor, customize the salad with other veggies, and use a meat thermometer to ensure the chicken is cooked properly.
