Ingredients

- 2 large boneless, skinless chicken breasts
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 2 cloves garlic, minced
- 1 tsp dried oregano
- Salt and pepper to taste
- Mixed greens (lettuce, spinach, etc.)
- Cherry tomatoes, halved
- Cucumber, sliced
- Feta cheese, crumbled
- Tzatziki sauce (homemade)
Instructions
- In a bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Marinate the chicken breasts for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Grill the chicken for 6-7 minutes on each side until cooked through.
- Let the chicken rest for a few minutes before slicing.
- In a large bowl, combine mixed greens, cherry tomatoes, sliced cucumber, and feta cheese.
- Add the sliced grilled chicken on top.
- For the tzatziki sauce, mix yogurt, grated cucumber, minced garlic, lemon juice, and salt in a bowl.
- Drizzle tzatziki sauce over the salad and serve.
Notes
Allow the chicken to marinate longer for more flavor, customize the salad with other veggies, and use a meat thermometer to ensure the chicken is cooked properly.
