Description

Ingredients

  • 1 lb chicken breast, cut into cubes
  • 2 lemons (juice and zest)
  • 3 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • Wooden skewers (soaked in water for 30 minutes)

Instructions

  1. In a bowl, mix lemon juice, lemon zest, olive oil, garlic, salt, pepper, and oregano.
  2. Add chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Thread chicken onto skewers.
  5. Grill the skewers for about 10-15 minutes, turning occasionally, until chicken is cooked through.
  6. Serve hot with extra lemon wedges and your choice of sides.

Notes
