Ingredients

  • 500g chicken breast tenders
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • Juice of 1 lemon
  • 2 sweet potatoes
  • 1 avocado
  • 1/4 cup diced red onion
  • 1/4 cup cilantro
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, combine olive oil, garlic powder, oregano, smoked paprika, lemon juice, salt, and pepper.
  3. Marinate the chicken tenders in the mixture for at least 30 minutes.
  4. While the chicken marinates, slice the sweet potatoes into fries, toss with olive oil and salt, and bake at 425°F (220°C) for 25-30 minutes or until crispy.
  5. Grill the chicken for 6-7 minutes on each side or until cooked through.
  6. For the avocado salsa, mix diced avocado, red onion, cilantro, lime juice, salt, and pepper in a bowl.
  7. Serve the grilled chicken on a bed of sweet potato fries and top with avocado salsa.

Notes

Marinate chicken overnight for enhanced flavor. Cut sweet potato fries evenly for uniform cooking.
