Ingredients

- 500g chicken breast tenders
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1/2 tsp smoked paprika
- Juice of 1 lemon
- 2 sweet potatoes
- 1 avocado
- 1/4 cup diced red onion
- 1/4 cup cilantro
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, combine olive oil, garlic powder, oregano, smoked paprika, lemon juice, salt, and pepper.
- Marinate the chicken tenders in the mixture for at least 30 minutes.
- While the chicken marinates, slice the sweet potatoes into fries, toss with olive oil and salt, and bake at 425°F (220°C) for 25-30 minutes or until crispy.
- Grill the chicken for 6-7 minutes on each side or until cooked through.
- For the avocado salsa, mix diced avocado, red onion, cilantro, lime juice, salt, and pepper in a bowl.
- Serve the grilled chicken on a bed of sweet potato fries and top with avocado salsa.

Marinate chicken overnight for enhanced flavor. Cut sweet potato fries evenly for uniform cooking.
