- 1 1⁄2 lbs boneless, skinless chicken breasts
- Zest & juice of 1 orange
- Zest & juice of 1 lemon
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Cooked rice
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- In a bowl, combine the orange zest, orange juice, lemon zest, lemon juice, olive oil, minced garlic, salt, and pepper.
- Add the chicken breasts to the marinade and let sit for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Remove the chicken from the marinade and grill for 6-7 minutes per side or until cooked through.
- Let the chicken rest for a few minutes before slicing.
- Serve the grilled chicken over cooked rice, garnished with fresh herbs if desired.
Notes
For enhanced flavor, marinate the chicken for longer than 30 minutes. You can also customize with different vegetables or protein options.
