- 1 cup strawberries, sliced
- 1/4 cup balsamic vinegar
- 1/4 cup feta cheese, crumbled
- 2 cups ditalini pasta, cooked and drained
- 2 cups mixed greens (optional)
- 1/4 cup red onion, thinly sliced (optional)
Instructions
- Preheat grill to medium-high heat. Season chicken with olive oil, salt, pepper, garlic powder, and paprika.
- Grill chicken for about 6-7 minutes on each side, or until cooked through.
- In a small saucepan, combine sliced strawberries and balsamic vinegar. Cook over medium heat until the strawberries soften and the mixture thickens.
- In a large bowl, combine cooked ditalini pasta, feta cheese, mixed greens, red onion, and the grilled chicken sliced on top. Drizzle with strawberry balsamic glaze before serving.
