- 1 chicken breast, cut into cubes
- 1/2 bell pepper, sliced (optional)
- 1 tbsp olive oil
- 1/2 tsp paprika
- 1/4 tsp garlic powder
- Salt & pepper to taste
- Wooden or metal skewers
- 1/2 cucumber, chopped
- 1 small tomato, diced
- A few red onion slices
- Fresh mint or parsley (optional)
- 1/2 cup white rice
- 1 tsp olive oil or butter
- Pinch of salt
- 1 cup water or broth
Instructions
- Marinate & Skewer Chicken: Toss chicken cubes in olive oil, paprika, garlic powder, salt, and pepper. Thread the chicken on skewers, adding bell pepper slices if you like.
- Grill or Sear the Skewers: Cook chicken skewers on a grill or in a pan for about 12–15 minutes, turning occasionally for even cooking.
- Make the Fresh Salad: In a bowl, mix the chopped cucumber, diced tomato, onion slices, and herbs. Season with lemon juice, salt, and pepper to taste.
- Cook the Rice: In a pot, add rice, a pinch of salt, and water (or broth). Simmer on low heat until the rice is fluffy and cooked through.
- Plate & Enjoy: Serve the grilled chicken skewers alongside the fluffy rice and fresh salad.
Notes
Marinate chicken for at least 30 minutes for optimal flavor. Keep leftover ingredients in separate airtight containers to maintain freshness.
