Description

A fresh and healthy salad combining grilled chicken, zucchini, and salad greens topped with a tangy balsamic dressing.


Ingredients

  • 1 1/2 lbs boneless, skinless chicken breasts (or thighs)
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • Salt & black pepper to taste
  • 1 zucchini, sliced lengthwise
  • Mixed salad greens
  • Balsamic vinegar

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, combine the chicken, olive oil, garlic, oregano, salt, and pepper.
  3. Grill the chicken for about 6-7 minutes on each side or until cooked through.
  4. While the chicken is grilling, place the zucchini on the grill and cook until tender.
  5. Once cooked, slice the chicken and zucchini into bite-sized pieces.
  6. In a large bowl, mix the grilled chicken, zucchini, and salad greens together.
  7. Drizzle with balsamic vinegar before serving.

Notes

Marinate the chicken for a few hours for extra flavor. Feel free to use other vegetables like bell peppers or asparagus.
