- 1 cup cooked brown rice
- 1 grilled chicken breast, sliced
- 1/2 cup diced tomatoes
- 1/2 cup sliced cucumber
- 1 cup fresh arugula
- 2 tbsp creamy ranch or tzatziki sauce
- Salt & black pepper, to taste
- 1 tsp dried Italian herbs
Instructions
- Season the chicken breast with salt, pepper, and Italian herbs. Grill until juicy and golden brown.
- Cook brown rice until tender and fluffy.
- Dice the tomatoes and slice cucumbers.
- In a bowl, layer brown rice, sliced grilled chicken, diced tomatoes, cucumber slices, and fresh arugula.
- Add a dollop of creamy ranch or tzatziki sauce and enjoy.
Notes
