Description

A simple and delicious Grilled Chicken Rice Bowl packed with juicy grilled chicken, fresh vegetables, and fluffy brown rice, perfect for lunch or dinner.


Ingredients

  • 1 cup cooked brown rice
  • 1 grilled chicken breast, sliced
  • 1/2 cup diced tomatoes
  • 1/2 cup sliced cucumber
  • 1 cup fresh arugula
  • 2 tbsp creamy ranch or tzatziki sauce
  • Salt & black pepper, to taste
  • 1 tsp dried Italian herbs

Instructions

  1. Season the chicken breast with salt, pepper, and Italian herbs. Grill until juicy and golden brown.
  2. Cook brown rice until tender and fluffy.
  3. Dice the tomatoes and slice cucumbers.
  4. In a bowl, layer brown rice, sliced grilled chicken, diced tomatoes, cucumber slices, and fresh arugula.
  5. Add a dollop of creamy ranch or tzatziki sauce and enjoy.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave.
