- 2 chicken leg quarters (thigh + drumstick attached)
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp dried oregano
- Salt & black pepper to taste
- Optional: squeeze of lemon juice
- 1/4 cup mayo
- 1 tbsp Dijon mustard
- 1 garlic clove, finely minced
- 1 tsp apple cider vinegar
- 1 tsp honey
- Salt & pepper to taste
- Splash of warm water to thin
Instructions
- Rub the chicken leg quarters with olive oil, smoked paprika, garlic powder, onion powder, dried oregano, salt, and black pepper. Let marinate for 30 minutes.
- Preheat your grill to medium heat. Grill the chicken quarters for 30-35 minutes, flipping halfway through. Rest for a few minutes before slicing.
- In a bowl, mix all drizzle ingredients: mayo, Dijon mustard, minced garlic, apple cider vinegar, honey, salt, and pepper. Gradually add warm water until pourable.
- Drizzle the creamy sauce over grilled chicken while warm.
- Slice chicken into servings and present on a platter.
Notes
Marinate chicken longer for more flavor and ensure it reaches an internal temperature of 165°F for safety. A squeeze of lemon juice can enhance the dish’s flavor.
