Ingredients

  • 1 chicken breast, chopped and grilled
  • 1 cup sweet potatoes, peeled and cubed
  • 1 cup broccoli florets
  • 1 tbsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • Salt & pepper to taste

Instructions

  1. Toss sweet potato cubes in olive oil, paprika, salt, and pepper. Roast at 400°F (200°C) for 25–30 minutes until they are golden and tender.
  2. Steam the broccoli for 3–4 minutes until it is bright green and slightly crisp, or roast it with olive oil and garlic.
  3. Season the chicken with garlic powder, paprika, salt, and pepper. Grill or sear it until fully cooked.
  4. Arrange the grilled chicken, roasted sweet potatoes, and broccoli on a plate.
  5. Optionally, drizzle with olive oil or a squeeze of lemon juice before serving.

Notes

For extra flavor, marinate the chicken in the spices for a few hours before cooking. You can add more veggies like bell peppers or carrots for variety.
