Description

A delicious and nutritious power bowl featuring grilled chicken, sweet potato fries, avocado, and fresh greens.


Ingredients

  • 1 lb chicken breast
  • 1 cup cooked rice
  • 1 avocado, sliced
  • 1 large sweet potato, cut into fries
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon paprika
  • Fresh greens (spinach or kale) for serving

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the sweet potato fries in olive oil, salt, pepper, and paprika. Spread them on a baking sheet and bake for 20-25 minutes, turning halfway through.
  3. Season the chicken breast with salt and pepper. Grill it on a preheated grill pan for 6-7 minutes per side, or until fully cooked.
  4. In a bowl, layer the cooked rice, fresh greens, sliced avocado, and grilled chicken. Top with sweet potato fries.
  5. Serve immediately and enjoy your power bowl!

Notes

Store leftovers in an airtight container in the fridge for up to three days. The greens may change texture slightly upon reheating.
