Ingredients

- 1 lb chicken breast
- 1 cup cooked rice
- 1 avocado, sliced
- 1 large sweet potato, cut into fries
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon paprika
- Fresh greens (spinach or kale) for serving
Instructions
- Preheat the oven to 425°F (220°C).
- Toss the sweet potato fries in olive oil, salt, pepper, and paprika. Spread them on a baking sheet and bake for 20-25 minutes, turning halfway through.
- Season the chicken breast with salt and pepper. Grill it on a preheated grill pan for 6-7 minutes per side, or until fully cooked.
- In a bowl, layer the cooked rice, fresh greens, sliced avocado, and grilled chicken. Top with sweet potato fries.
- Serve immediately and enjoy your power bowl!
Notes
Store leftovers in an airtight container in the fridge for up to three days. The greens may change texture slightly upon reheating.
