Description

A delightful mix of flavors and textures with juicy grilled chicken, fresh vegetables, and creamy tzatziki sauce, perfect for lunch or dinner.


Ingredients

  • 1 grilled chicken breast, sliced
  • 1/2 cup cherry tomatoes (some grilled, some fresh)
  • 1/2 cup diced cucumber
  • 1/4 small red onion, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/2 tsp olive oil
  • Salt & black pepper to taste
  • 1/2 cup Greek yogurt
  • 1 small garlic clove, minced
  • 1/4 cup cucumber, finely grated
  • 1 tbsp fresh dill or parsley, chopped
  • Juice of 1/2 lemon
  • Salt to taste

Instructions

  1. Season the chicken with olive oil, salt, and pepper. Grill or pan-sear it for 5–7 minutes on each side. Once cooked, slice it into strips.
  2. In a bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, herbs, and salt. Stir until you achieve a creamy consistency for the tzatziki sauce.
  3. For added flavor, grill or sear half of your cherry tomatoes for a smoky twist.
  4. In a bowl, layer the sliced chicken, fresh and grilled tomatoes, diced cucumber, and chopped red onion. Drizzle with olive oil and sprinkle with parsley.
  5. Add a dollop of tzatziki over the top and serve immediately or pack it up for a delicious lunch later.

Notes

Make sure to season your chicken well for maximum flavor. Feel free to add toppings like feta cheese or olives for more Mediterranean flair.
