- 1 grilled chicken breast, sliced
- 1/2 cup cherry tomatoes (some grilled, some fresh)
- 1/2 cup diced cucumber
- 1/4 small red onion, chopped
- 1/4 cup fresh parsley, chopped
- 1/2 tsp olive oil
- Salt & black pepper to taste
- 1/2 cup Greek yogurt
- 1 small garlic clove, minced
- 1/4 cup cucumber, finely grated
- 1 tbsp fresh dill or parsley, chopped
- Juice of 1/2 lemon
- Salt to taste
Instructions
- Season the chicken with olive oil, salt, and pepper. Grill or pan-sear it for 5–7 minutes on each side. Once cooked, slice it into strips.
- In a bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, herbs, and salt. Stir until you achieve a creamy consistency for the tzatziki sauce.
- For added flavor, grill or sear half of your cherry tomatoes for a smoky twist.
- In a bowl, layer the sliced chicken, fresh and grilled tomatoes, diced cucumber, and chopped red onion. Drizzle with olive oil and sprinkle with parsley.
- Add a dollop of tzatziki over the top and serve immediately or pack it up for a delicious lunch later.
Notes
Make sure to season your chicken well for maximum flavor. Feel free to add toppings like feta cheese or olives for more Mediterranean flair.
