A fresh and tasty meal packed with grilled chicken, vibrant vegetables, and a creamy tzatziki sauce, perfect for lunch or dinner.


Ingredients

  • 1 grilled chicken breast, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup chopped cucumber
  • 1/4 red onion, diced
  • 1/2 cup chopped bell peppers (grilled or raw)
  • 2 tbsp feta cheese, crumbled
  • 1 tbsp fresh parsley, chopped
  • Salt & black pepper to taste
  • 1/2 cup plain Greek yogurt
  • 1/4 cucumber, grated
  • 1 garlic clove, minced
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • 1 tsp fresh dill or mint
  • Salt to taste

Instructions

  1. Season the chicken breast with salt and pepper. Grill it until it’s juicy and golden.
  2. Halve the cherry tomatoes, dice the cucumber and red onion, and slice the grilled bell peppers.
  3. In a bowl, mix together the Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, dill, and salt to create the tzatziki sauce. Chill it for a bit.
  4. In a large bowl, layer the grilled chicken, fresh veggies, and crumbled feta.
  5. Spoon the tzatziki sauce over everything and garnish with parsley.

Notes

Letting the tzatziki chill helps develop its flavor. Serve fresh for best taste, or enjoy with warm pita bread or rice.
