Ingredients

  • 1 grilled chicken breast, chopped
  • 1/2 cup brown rice, cooked
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber salsa (cucumber, tomato, red onion, parsley)
  • 2 tbsp herbed Greek yogurt sauce or tzatziki
  • Olive oil
  • Salt
  • Pepper
  • Garlic powder

Instructions

  1. Season the chicken breast with olive oil, garlic powder, salt, and pepper. Grill or sear until cooked through and golden.
  2. Prepare brown rice according to package instructions.
  3. Dice cucumber, tomato, and red onion. Toss with chopped parsley, olive oil, lemon juice, salt, and pepper to make cucumber salsa.
  4. Slice cherry tomatoes and season lightly with olive oil and salt.
  5. In a bowl, layer the brown rice, grilled chicken, cucumber salsa, and tomatoes. Add a dollop of herbed yogurt sauce or tzatziki before serving.

Notes

Marinate the chicken for a few hours for added flavor. Feel free to add other vegetables or a spicy kick with red pepper flakes!
