Ingredients

- 1 grilled chicken breast, chopped
- 1/2 cup brown rice, cooked
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumber salsa (cucumber, tomato, red onion, parsley)
- 2 tbsp herbed Greek yogurt sauce or tzatziki
- Olive oil
- Salt
- Pepper
- Garlic powder
Instructions
- Season the chicken breast with olive oil, garlic powder, salt, and pepper. Grill or sear until cooked through and golden.
- Prepare brown rice according to package instructions.
- Dice cucumber, tomato, and red onion. Toss with chopped parsley, olive oil, lemon juice, salt, and pepper to make cucumber salsa.
- Slice cherry tomatoes and season lightly with olive oil and salt.
- In a bowl, layer the brown rice, grilled chicken, cucumber salsa, and tomatoes. Add a dollop of herbed yogurt sauce or tzatziki before serving.
Notes
Marinate the chicken for a few hours for added flavor. Feel free to add other vegetables or a spicy kick with red pepper flakes!
