Ingredients

- 2 boneless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon oregano
- Salt and pepper to taste
- 2 cups mixed greens
- 1/2 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup kalamata olives, sliced
- Lemon wedges for serving
Instructions
- Preheat the grill to medium-high heat.
- Rub the chicken breasts with olive oil, oregano, salt, and pepper.
- Grill the chicken for 6-7 minutes per side or until fully cooked.
- Remove the chicken from the grill and let it rest for 5 minutes before slicing.
- In a bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, feta cheese, and kalamata olives.
- Top the salad with sliced grilled chicken.
- Serve with lemon wedges.
