Ingredients

  • 2 boneless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 2 cups mixed greens
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup kalamata olives, sliced
  • Lemon wedges for serving

Instructions

  1. Preheat the grill to medium-high heat.
  2. Rub the chicken breasts with olive oil, oregano, salt, and pepper.
  3. Grill the chicken for 6-7 minutes per side or until fully cooked.
  4. Remove the chicken from the grill and let it rest for 5 minutes before slicing.
  5. In a bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, feta cheese, and kalamata olives.
  6. Top the salad with sliced grilled chicken.
  7. Serve with lemon wedges.
