Description

A refreshing dish featuring savory grilled chicken paired with a sweet and tangy fresh pineapple salsa. Perfect for summer barbecues and quick dinners.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice (freshly squeezed)
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 cup fresh pineapple, diced
  • 1/2 red onion, diced
  • 1/4 cup chopped cilantro
  • 1 jalapeño, minced (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix olive oil, lime juice, minced garlic, chili powder, salt, and pepper.
  3. Marinate the chicken breasts in the mixture for at least 30 minutes.
  4. While the chicken marinates, prepare the salsa by combining diced pineapple, red onion, cilantro, jalapeño, and a pinch of salt in a separate bowl.
  5. Grill the marinated chicken for 6-7 minutes per side or until fully cooked.
  6. Serve the grilled chicken topped with fresh pineapple salsa.

Notes

For extra flavor, let the chicken marinate longer than 30 minutes, up to 2 hours. Adjust the spice level of the salsa to taste.
