Ingredients

- 1 grilled chicken breast, sliced
- 1/2 cup cooked white rice
- 1/2 red bell pepper, sliced
- 1/2 yellow bell pepper, sliced
- 1/4 avocado, sliced
- 2 tbsp whipped cream cheese or sour cream
- 1 tbsp olive oil
- 1/2 tsp chili powder
- 1/2 tsp cumin
- 1/4 tsp garlic powder
- Salt & pepper, to taste
- Optional: lime wedge for garnish
Instructions
- Rub the chicken with olive oil, chili powder, cumin, garlic powder, salt, and pepper. Grill or sear the chicken until perfectly cooked.
- In a hot pan, sauté the bell peppers until they are charred and slightly soft.
- Cook the white rice and season with a pinch of salt.
- In a bowl, layer the rice, grilled chicken, charred peppers, and avocado. Add the cream cheese on top.
- Sprinkle with black pepper, squeeze some lime juice, and add hot sauce if you like it spicy.
Notes
Make sure to marinate the chicken for at least 30 minutes for extra flavor. You can store leftovers in separate airtight containers for up to 3 days.
