A tasty and healthy meal combining classic Caprese flavors with grilled chicken, perfect for lunch or dinner.
Ingredients

- 2 grilled chicken breasts, sliced
- 1 cup cherry tomatoes (mixed colors), halved
- 1 cup fresh mozzarella, torn
- 1 cup sliced cucumber
- 1 1/2 cups arugula or baby greens
- 1 tbsp olive oil
- 1 tsp balsamic vinegar (optional)
- Salt & cracked black pepper to taste
Instructions
- Season the chicken breasts with olive oil, salt, and cracked black pepper, and grill until juicy and golden brown.
- Layer arugula at the bottom of a large bowl.
- Cut cucumbers and halve cherry tomatoes.
- Tear fresh mozzarella into small pieces and mix with halved tomatoes.
- Place sliced grilled chicken on top of the greens, then add tomato and mozzarella mix, along with cucumbers.
- Drizzle with olive oil and balsamic vinegar if desired.
Notes
Great for meal prep! Store ingredients separately until ready to eat to keep the greens fresh.
