Description

A tasty and healthy meal combining classic Caprese flavors with grilled chicken, perfect for lunch or dinner.


Ingredients

  • 2 grilled chicken breasts, sliced
  • 1 cup cherry tomatoes (mixed colors), halved
  • 1 cup fresh mozzarella, torn
  • 1 cup sliced cucumber
  • 1 1/2 cups arugula or baby greens
  • 1 tbsp olive oil
  • 1 tsp balsamic vinegar (optional)
  • Salt & cracked black pepper to taste

Instructions

  1. Season the chicken breasts with olive oil, salt, and cracked black pepper, and grill until juicy and golden brown.
  2. Layer arugula at the bottom of a large bowl.
  3. Cut cucumbers and halve cherry tomatoes.
  4. Tear fresh mozzarella into small pieces and mix with halved tomatoes.
  5. Place sliced grilled chicken on top of the greens, then add tomato and mozzarella mix, along with cucumbers.
  6. Drizzle with olive oil and balsamic vinegar if desired.

Notes

Great for meal prep! Store ingredients separately until ready to eat to keep the greens fresh.
